🥂 Tasting Notes

Color & Appearance: Deep cherry-ruby (“rojo picota intenso”) with a vibrant, slightly purplish rim.
Nose: Intense aromas of ripe red and black fruit (blackberry, plum), overlaid with gentle vanilla and toasted oak from the barrel ageing. You’ll also sense the altitude in the freshness and clarity of the aromatics.
Palate: Medium to full body, a smooth entry, polished tannins, well-balanced acidity, delivering both elegance and depth. The oak adds complexity but stays in the background, allowing the fruit and terroir to shine rather than dominate.
Finish: Long and confident, with lingering dark-fruit notes, subtle spice and a refined finish that invites another glass.
Food Pairing: Ideal with grilled red meats (ox, lamb), game, mature cheeses, rich stews and even elevated vegetarian dishes with umami (e.g., mushroom risotto). Serve around 16-18 °C.
